Transfer to con- tainers and freeze until firm or add blankets and ripen the ice cream in the freezer FRENCH VANILLA ICE CREAM Makes 1 '~ quarts 4 cups light cream 4 egg yolks 1 TB. flour % cup sugar ~ tsp. salt 3-inch piece of vanilla bean or ! TB. vanilla extract Heat 2 cups of cream to slm- mering. ('ombme the egg yolks. flour, sugar and salt and beat. mixture will appear slightly lumpy. Stir the hot cream into the eg~ yolk mixture and return to the saucepan Place over low heat and stir constantly until thickened into a light custard Remove from the heat and add the remaining cream. Split the vanilla bean lengthwise and scrape the black seeds into the mixture or add the vanilla ex- tract Cool the mixture before placing in the ice cream freezer can. Churn ior approximately 20 min- utes or until consistency of whipped cream+ Transfer to con- tainers and freeze until firm.
