Add sugar and continue beating. Stir in oil, vanilla and zuc- ’chini. Mix dry ingredients together, except walnuts. Stir into egg mixture. ‘Add walnuts. ‘ Transfer zucchini dough evenly into 2 greased and floured medium sized loaf pans. Bake for 50—60 min- utes. Remove from oven. Let cool for 10 minutes in pan. Turn out onto rack. Cool completely. Place in large freez— er bags and freeze. PEACH CHUTNEY needs to be cocked, poured into‘/2 pint jars and then “sealed in a boiling water bath for 20 minutes. A little trouble, but it’s so good at Thanksgiving time with turkey or year round as a condiment for pork or chicken. If you don’t mind spend— ing a little time in the kitchen, you’ll enjoy the fruits of your labor through- out the year. PEACH CHUTNEY 14 cups of peeled diced peaches 4 large cloves of garlic 2 Tablespoons white mustard seeds 1 Tablespoon salt 23/4 teaspoons red pepper flakes 1 Tablespoon turmeric 1 teaspoon powdered cumin ’/4 cup chopped fresh ginger 2 red bell peppers, seeded and diced 2 cups dark raisins 2 large yellow onions, chopped 1 quart cider vinegar ' 2 pounds brown sugar ‘/2 box cinnamon sticks, broken into 1 inch pieces . Place all ingredients in a large, heavy bottomed stainless or enamel pot. Cook over moderate heat, stirring fairly often for 1 to 1'/2 hours. Ladle inton pint canning jars. Screw on lids. Cook in a water bath for 20 minutes.
